At the beginning of the 1960s, the married couple Remedios Monge and Antonio Saez bought a manor house in the zigzagging Calle de Zumalacárregui, 27, in San Vicente de la Sonsierra.
At first it was a shop and later a bar and restaurant. The children (6) all passed through the family business. Javier, Antonio, Jesús, Pedro and Mariola. During these years the cuisine was totally traditional. Remedios was delegating and passing the baton to Jesús who modified the kitchen, making it more creative, without forgetting or leaving the traditional cuisine behind. And Mariola took over the management of the dining room.
